1.准备好图上材料(肉末用料酒生抽蚝油腌制一下备用)

2.先把豆腐切成小块,入锅水煮开,加点盐入味,捞出沥干水备用

3.炒锅加入适量的油,先加入辣椒生姜蒜泥葱爆香

4.再把加肉末加进去炒熟

5.放入豆瓣上色

6.锅里加入蚝油生抽调味,稍微加点水倒入豆腐煮个5分钟(水凉覆盖过豆腐就行)

7.煮开后加水淀粉勾芡,不要用锅铲容易翻碎豆腐

8.最后加花椒面鸡精香菜末装盘

小窍门&温馨提示
豆腐我选的是一般专门嫩的豆腐适合烧麻婆豆腐,最好用不粘锅勾芡的时候不容易糊锅。淀粉勾芡一定要稀点的薄点,最好选用花椒面比花椒口感要好点,豆腐烧好要趁热吃冷了容易糊了影响口感
